Meals are no fun when you have to sacrifice taste for nutrition. I love this smoothie because it is rich in fibre and Vitamins but very tasty. It is great with or without ginger and you may use granny smith apples instead of apple juice if you prefer. I like to freeze the pineapple and kale so that my smoothie is very cold :) Beside I find that kale lasts longer in the freezer than the refrigerator anyway. Kale can be a bit gritty so be sure to blend it out thoroughly before adding the other ingredients. Enjoy!
1 cup sugarfree apple juice
1 1/2 cup kale leaves, diced
2 kiwis, diced
1 1/2 cup fresh pineaple, cubed
4 - 6 ice cubes
1/2 - 1 tsp fresh ginger, grated (optional)
Using a blender or food processor, puree the kale and kiwis with the apple juice for about 5 minutes (resting the blender in between each minute).
Check for texture and once the kale and kiwi are blended to your liking add the other ingredients and continue to blend to complete the smoothie.
Serve immediately .
YIELD: 1 -2 servings
If too thick add more apple juice, crushed ice or water. Not an apple juice fan? Use Pineapple juice :)
